For emails, you can change the subject line or preview text for your email by clicking on the gear icon () in the sidebar.
For pages, the settings option allows for changing your page title.
For emails, you can use the subject line field to set the subject for any test emails you send out. It will also be used with certain integrations, to pass on the subject to the email provider you export to.
Also for emails, there is preview text, commonly shown in email clients under the subject line. If your theme has this functionality, a field will be made available for you to update its text.
For pages, you will see a field for the page title that appears in browsers.
Under the Meta tab, depending on the properties setup in your theme, you may see the following fields that you can modify for your email or page:
